My potato gratin…

RECIPE :

Ingredients

* 1-2 pieces garlic
* 25 g butter
* 1 kg potatoes
* 125 ml full fat milk
* 125 ml cream
* 1 egg
* salt
* black pepper
* nutmeg
* thijme
* 50 g grated cheese

Preparation :

Preheat oven to 175 ° C. Peel and crush the garlic. Line a loaf tin or cake tin with parchment paper.
Peel the potatoes and wash and dry them , then cut on a mandolin in very very thin slices or use a
kitchen machine.
In large bowl, stir milk and cream and egg. Season mixture with 2 tsp salt, pepper and nutmeg,garlic,
thijme.
Add potato slices and stir gently a few times so that all slices are coated with cream.
pour the potato mixture in the lined baking tin,press down with your hand so the potatoes are compact
in the tin.
Sprinkle potatoes with cheese and butter in small pieces. Place on rack in middle of oven and bake
between 45-60 minutes. take out of the oven and cool for 30 minutes…then place some tin foil or
parchment paper on top and weigh down with something heavy like tins from the storage cupboard.
When cool enough transfer all to the fridge(including the tins on top).The next day remove from tin and
cut in 1 cm thick slices and reheat in preheated oven or nuke in the microwave for a few minutes.

 

 

Oh yes…… Remember always to keep eggs cool 4 celcius is the best!!!!!
